The Demi Chef de Partie (DCDP) – Pizza Maker is responsible for supporting the Chef de Partie in overseeing the pizza section of the kitchen. This includes preparing pizza dough, sauces, and toppings, cooking pizzas to perfection, and ensuring all dishes meet the highest standards of quality and presentation. The role involves supervising junior kitchen staff, maintaining food safety standards, and contributing to a positive and productive kitchen environment.
Assist the Chef de Partie in managing the pizza section of the kitchen.
Prepare dough, sauces, and toppings according to established recipes.
Cook pizzas using wood-fired, gas, or electric ovens, ensuring consistent quality and presentation.
Supervise and coordinate the activities of Commis Chefs and kitchen assistants.
Prepare mise en place and ensure readiness for service.
Follow standard recipes accurately and make necessary adjustments as needed.
Ensure all dishes are prepared and presented to hotel standards.
Monitor portion sizes and minimize food waste for effective cost control.
Regularly taste food items to ensure consistent quality and flavor.
Maintain cleanliness and organization in your section, in line with hygiene and safety standards.
Check and maintain equipment, ensuring it is clean and functioning properly.
Manage stock and inventory for your section, ensuring proper rotation and storage.
Report shortages or quality issues to the Chef de Partie or Sous Chef.
Train and mentor junior kitchen staff to develop their skills and efficiency.
Contribute ideas for new pizzas or improvements to the existing menu.
Coordinate with other kitchen sections to ensure efficient service delivery.
Participate in kitchen meetings and uphold a collaborative team culture.
Ensure guest satisfaction by consistently delivering high-quality dishes.
Assist with plating and service during busy periods.
Proven experience as a Commis Chef or in a similar role, with a solid understanding of kitchen operations.
Culinary degree or equivalent professional training is preferred.
Strong cooking skills and knowledge of various culinary techniques and cuisines.
Ability to manage a section of the kitchen and supervise junior staff.
Excellent attention to detail and a commitment to quality.
Good understanding of food safety and hygiene regulations.
Ability to work under pressure in a fast-paced environment.
Strong communication and teamwork skills.
Flexibility to work shifts, including evenings, weekends, and holidays.
