Job Description

The Chef de Partie is responsible for running a specific section of the kitchen, such as grill, sauté ensuring food preparation and presentation meet the hotel’s quality standards. This hands-on role involves supervising commis chefs, maintaining hygiene standards, and ensuring smooth operations within the assigned section.

 

  • Manage a designated kitchen section independently and ensure it operates efficiently during service.

  • Prepare and cook food items in accordance with recipes, quality standards, and portion sizes.

  • Supervise and train Commis Chefs and kitchen helpers working within the section.

  • Ensure that mise en place is prepared and replenished for each shift.

  • Maintain cleanliness and organization of the work area, equipment, and storage spaces.

  • Enforce food safety, sanitation, and hygiene standards as per HACCP guidelines.

  • Monitor inventory levels and notify the Sous Chef of any shortages or ordering requirements.

  • Minimize waste and maintain food cost control within the section.

  • Collaborate with other kitchen sections to ensure smooth coordination during service.

  • Assist in menu development and suggest improvements based on feedback and trends.

Desired Skill & Expertise

  • Diploma or certification in Culinary Arts or a related field.

  • Minimum 2–3 years of experience in a professional kitchen, preferably in a hotel or upscale restaurant.

  • Strong knowledge of cooking techniques and food safety standards.

  • Ability to work under pressure and meet deadlines in a fast-paced environment.

  • Team player with good communication and leadership skills.

  • Flexibility to work shifts, weekends, and public holidays.

  • Attention to detail and commitment to consistency and quality.
