The Commis II is responsible for assisting in the daily operations of the kitchen by preparing ingredients and cooking under the supervision of senior chefs. The role ensures consistency, quality, and hygiene in all food preparation tasks while maintaining a clean and organized workstation. The Commis II is expected to learn and grow within the kitchen brigade by following instructions, adhering to recipes, and developing culinary skills.
Assist in the preparation and production of food items in accordance with established recipes and standards.
Ensure all mise en place is prepared and ready for service in a timely manner.
Maintain cleanliness and organization of the assigned workstation at all times.
Follow proper food handling and hygiene practices, including labelling, storage, and FIFO rotation.
Support Chef de Partie and other senior kitchen staff during service and prep times.
Ensure that all kitchen equipment is operated safely and report any malfunctions immediately.
Assist in receiving and storing deliveries in the correct areas, ensuring items are checked for quality and quantity.
Contribute to minimizing food waste and controlling food cost by following proper portioning and storage techniques.
Participate in daily briefings and training sessions as scheduled.
Follow the cleaning schedule and maintain sanitation standards in compliance with food safety guidelines (HACCP).
Perform opening and closing duties as assigned.
Maintain a professional and respectful attitude with team members and uphold the standards of the kitchen at all times.
Take initiative in learning new cooking techniques and menu items.
Minimum of 2 years’ experience in a Western kitchen environment.
Consistently demonstrates initiative and a proactive approach to work.
Strong eagerness to develop skills and expand culinary knowledge.
Skilled in the preparation and service of both hot and cold menu items.
Capable of managing assigned tasks and delivering results within deadlines.
Proficient in reading and following recipes with a solid understanding of cooking techniques.
Possesses a collaborative, team-oriented mindset with a flexible attitude toward a variety of tasks.
Excellent interpersonal skills with the ability to identify and solve problems effectively.
Sound practical and operational capabilities, along with adequate administrative competence.
