Job Description

We are looking for a skilled and detail-oriented Demi Chef de Partie (Butchery) to join our culinary team at [Hotel Name]. In this role, you will specialize in the butchery section, responsible for preparing meats, poultry, and fish for various kitchen sections. You will work closely with senior chefs to ensure that all butchery tasks are carried out to the highest standards of quality, safety, and hygiene. Key Responsibilities:

  • Break down and portion meats, poultry, and fish to the required specifications for the kitchen, ensuring all cuts are consistent, precise, and of the highest quality.
  • Perform butchery tasks such as deboning, trimming, filleting, and portioning, following specific recipes and portion sizes as directed.
  • Assist in maintaining the butchery section’s inventory, ensuring proper storage, rotation, and handling of meats and seafood to ensure freshness and minimize waste.
  • Adhere to all food safety and hygiene regulations when handling, storing, and preparing meat and seafood products, ensuring cleanliness and safety in the butchery area.
  • Support other kitchen sections by providing pre-prepared meats, fish, and proteins in the correct quantities and to the required standards during service.
  • Monitor the quality of the meats and seafood used in the kitchen, ensuring that all items meet the hotel’s standards for appearance, freshness, and quality.
  • Work alongside the Chef de Partie and other kitchen staff, providing support in the butchery section, and collaborating with other departments to ensure smooth operations.
  • Actively develop your butchery skills, learning from the head chefs and other experienced team members, and participating in training sessions to further enhance your craft.

Desired Skill & Expertise

  • Previous experience as a Demi Chef De Partie (Butchery) or in a similar role in a hotel or restaurant environment.
  • In-depth knowledge of butchery techniques, including the proper handling and preparation of meats, poultry, and seafood.
  • Ability to work with precision and attention to detail, ensuring consistency and high-quality preparation.
  • Strong understanding of food safety standards and hygiene procedures.
  • Ability to work efficiently under pressure, especially during busy service times.
  • Good communication and teamwork skills.
  • Culinary qualification (e.g., NVQ Level 2 or equivalent) or specific butchery certification is preferred.
  • Passion for working with meats and a desire to further develop butchery skills.
